The Farmtable
When we decided to make small, homemade batches of ice cream we knew we
would need a commercial kitchen. All the love that goes into raising
these cows and making great milk would also need to be apparent in our
ice cream. To us, this meant cooking up everything from scratch...
cutting up the berries and cooking them down, toasting the nuts, making
and baking the cones and cookies, etc. Then we thought instead of putting
this kitchen in the creamery (in the old barn) -- we should put it
on wheels so we can take it with us! So, that's what we did.
We cook and bake up a variety of sweet and savory foods depending on the
event and venue we're at. We're big on made from
scratch, just like your momma made (or just like you dreamed she would
have made), easy going food. In fact, many of our recipes are favorites
from our family cookbooks... one of those cookbooks is actually in
print! (*see below for more info) You'll always find ice cream,
homemade waffle cones and ice cream cookie sandwiches no matter where we
are. We serve a breakfast and lunch special at the Pakatakan Market every
Saturday as well.
The Catskill Kitchen: Seasonal Recipes from the Dry Brook Valley
By Evelyn Fairbairn Budd, Forward by Sally Fairbairn
Aunt Evelyn was the sister of Jake's father. She wrote this book through her eyes, as a child, growing up in the 1950's on the farmstead we now calls Lazy Crazy Acres. Much of the book also takes place on her Aunt Florence and Uncle Claude's farm just up the road. This farm is now home to Jake's parents Doctor John and Sally Fairbairn.
The book can be purchased at the Artist's Guild Store in downtown Margaretville.
